Over the years, I never fell in love with okroshka and until recently I did not cook it at all, until I was advised to try making okroshka with mayonnaise. The recipe did not inspire any confidence in me; I hated this dish since childhood, but nevertheless I decided to try to cook it. I made this okroshka and liked it, and since then I’ve been preparing it this way.

To prepare okroshka with mayonnaise you will need:

  • 3 pieces
  • boiled meat or sausage 300 grams
  • cucumber 3 pieces
  • eggs 4 pieces
  • bunch of green onions
  • green
  • mayonnaise 150-200 grams
  • lemon 1 piece

Boil potatoes in their skins, peel. I didn’t cook the potatoes as usual, but simply baked them in the microwave very quickly for 10-15 minutes, the potatoes were ready. Boil the eggs hard-boiled, so that the eggs do not burst during cooking, they should be placed in boiling water, and cooked for 10 minutes, and then placed in cold water. Okroshka can be prepared with both meat and sausage. This time I had sausage. Peel the boiled potatoes and cut into small cubes. Also finely chop the eggs. Cut the cucumbers into small cubes. Chop the greens as well.

Place all the chopped products into the pan and stir. Add mayonnaise to them and stir so that the mayonnaise is evenly distributed throughout all the products. Then pour a small amount of chilled water into the okroshka and stir until the mayonnaise is completely dissolved. Add as much water to the okroshka as you think is necessary to obtain the thickness of the okroshka you need. Add the juice of half a lemon to the okroshka, try it, if you think there is not enough acid, then add more lemon juice.

Many people, regardless of age, prefer to eat cold soup in the summer. This dish is very simple to prepare and does not take much time to prepare. Okroshka is most often consumed for lunch. But, depending on the preparation and what the dish is used for, it can be served for dinner.

The cold dish is prepared with different broths, fermented milk products, vinegar, kvass or beer, and the ingredients are seasoned with fermented milk products. Okroshka with mayonnaise is prepared in an elementary way; it can be compared to Olivier salad, if you do not take into account that it often includes radishes. Before cooking, you need to be sure that the ingredients included in it are of high quality and fresh.

How to prepare a dish with mayonnaise: cut boiled potatoes, radishes, sausage, any greens to taste, fresh cucumbers, eggs into cubes. If desired, you can add onions. Salt, ground pepper and mayonnaise are added to taste. As a dressing, you can use any mayonnaise, for example, Provencal, olive or quail egg.

There are several ways to prepare okroshka broth with mayonnaise and water. First, add water to mayonnaise and stir. Secondly, after preparing the salad, first season it with Provencal and only then add mineral water with or without gas. Okroshka in water with mayonnaise is very helpful if you don’t have a refrigerator or it’s broken. After all, cold mineral water can be bought in any store. To know how to make okroshka using water, you can use recipes and select the appropriate composition of its ingredients.

The first course with vinegar and smoked sausage is prepared in the following way: cut the sausage, cucumbers, boiled potatoes and eggs as desired. Salt and herbs (parsley, dill, green onions or cilantro) are added to the ingredients. Mix everything thoroughly, then prepare the broth. Sour cream is diluted with mineral water in a 1:1 ratio, and a little vinegar is added to the resulting liquid. Thus, okroshka made with vinegar and water is ready for use.

A dish cooked with beer is wonderful and nutritious. The stronger sex will appreciate it. How to cook okroshka with beer? First, prepare the so-called salad. Chop sausage, eggs, potatoes, radishes, fresh cucumber and herbs and mix thoroughly. Place the salad in the refrigerator for half an hour. Beer is poured over all products only before serving. Next, let's look at four simplest cooking options.

  1. Classic okroshka on the water

Components:

  • potatoes 4 pcs.;
  • eggs 4 pcs.;
  • medium-length cucumbers 2 pcs.;
  • any sausage 0.5 kg;
  • mineral water with or without gas 1.5 l.;
  • greens to taste;
  • salt, pepper

Prepare and cut the vegetables into cubes, chop the herbs, add salt and add mineral water to the soup, mix well. If you wish, you can add sour cream, kefir or mayonnaise in the amount of 150-200 grams to the soup.

It should be noted that with some changes in the composition of the ingredients and broth, the remaining recipes will be similar to the classic recipe for okroshka with water.

  1. Recipe for okroshka on water with sausage and ham

Components:

  • ham or chicken roll 350 gr..;
  • smoked sausage 150 gr.;
  • boiled potatoes 5 pcs.;
  • eggs 2 pcs.;
  • sour cream 150 gr.;
  • water 2 l.;
  • cucumbers (fresh or pickled) 3 pcs.;
  • salt, spices and herbs to taste.

Prepare cold soup in the same way as indicated in the first recipe. The only thing is that the composition of the broth changes. Liquid ingredients are mixed and pre-prepared products are poured into it.

  1. Cold water soup with vinegar and sour cream

Since this dish is prepared mainly by lovers of sourness, sometimes, in the absence of vinegar, you can add citric acid or juice.

Components:

  • barrel cucumbers 4 pcs.;
  • potatoes 5 pcs.;
  • boiled or fried chicken meat 500 gr.;
  • eggs 5 pcs.;
  • radishes 6 pcs.;
  • sour cream 300 gr.;
  • greens, salt to taste;
  • water 2 glasses;
  • vinegar 3 tbsp.

The salad is prepared according to classic recipe, for example, like okroshka on water.

Important! Note to the housewife: add sour cream to the chopped products first, mix thoroughly with all the ingredients and only then add vinegar diluted with water. Otherwise, mixing okroshka with vinegar and water will be very problematic.

  1. Cold soup with sparkling water and kefir

Carbonated water in an amount of 1.5 liters is mixed with kefir - 1 liter (it can be of any fat content, except 0%). Drinks are first put in the refrigerator while the food is being prepared and cut into cubes.

Components:

  • boiled potatoes 7 pcs.;
  • sausage or boiled chicken meat 500 gr.;
  • cucumbers 4 pcs.;
  • radishes 7 pcs.;
  • eggs 5 pcs.;
  • herbs, spices and salt to taste.

All ingredients are cut into cubes and poured into a broth consisting of kefir and sparkling water. If you remove meat products from the recipe, you get a wonderful cold vegetable soup. The dish is suitable for vegetarians.

Ingredients for making cold soup may vary. Housewives often use what they have on hand. You don't have to follow the recipe at all. Especially if there is a shortage of any ingredient in the house, and there is no way to run to the store. Cold soup is a dish that cannot be spoiled. Therefore, chefs recommend not to be afraid and experiment.

On hot summer days, cold soups are a real hit. Including all types of okroshka. These dishes appeared in Ancient Rus' and then they were considered the food of the poor. And the ingredients in okroshka were the cheapest products - potatoes, overripe cucumbers, homemade bread kvass and, of course, onions. Later they began to add boiled turnips, rutabaga and carrots to it. Over time traditional recipes Cold soups have changed and are now prepared with meat, smoked meats or fish and are served even in expensive, top-class restaurants. Every recipe there is original and unique. But classic okroshka with mayonnaise and water with vinegar is prepared very quickly, and the result is beyond praise. The prepared products are cut and mixed with the dressing, cold water is added. In our recipe, ordinary table vinegar is indicated as an acidifying agent, but you can use aromatic apple (or wine), freshly squeezed lemon or lime juice.

Ingredients

  • Boiled sausage – 300 g;
  • Potatoes – 200 g;
  • Chicken eggs – 3-4 pcs.;
  • Fresh cucumber – 2 pcs.;
  • Green onions – 40-50 g;
  • Dill and parsley - a large bunch;
  • Boiled water – 1-1.5 l;
  • Mayonnaise – 200 g;
  • Vinegar 6% or lemon juice - 2-3 tbsp. l.;
  • Salt - to taste.

Preparation

We start by preparing the ingredients. Boil and cool water for soup. And if you have already tried okroshka in water, take cold whey instead (from under sour milk) or kefir. Boil the potatoes and eggs until tender. Then we clean it. We carefully sort the cucumbers and all the greens and rinse them in a cup of water. Then dry in layers of paper towel. Not only fresh cucumber is suitable, but also salted or pickled. We peel it from areas of rough skin and cut it into small cubes, put it in a bowl or directly into a pan.

In the same way, cut the peeled boiled eggs and add them to the bowl. The cutting of products can be finer, for example, it is permissible to grate everything, and even mash the potatoes into a thick puree.

We cut the boiled potatoes and add them to the rest of the products.

Cut the sausage into smaller pieces. If you don’t have boiled sausage on hand, you can use smoked sausage, regular sausages or small sausages.

Chop the greens. At first a little, at the end you can add more if desired.

In a separate bowl, mix mayonnaise with a little water, vinegar and salt. If desired, mayonnaise can be replaced with sour cream, but then add a couple of pinches of some spices so that the okroshka is not bland. Pour the dressing into the chopped ingredients in the pan. Stir and add cold boiled water to obtain the desired thickness of the soup. Be sure to taste it, maybe you need to add a little salt, vinegar or fresh herbs.

Delicious okroshka with mayonnaise and sausage only comes out chilled, so before pouring it into plates, keep the pan in the refrigerator for half an hour. Properly seasoned cold soup is a balanced, tender and satisfying dish.

Cooking tips

  • To increase the nutritional value of okroshka, chilled chicken or meat broth is often used instead of plain water. In this case, the main ingredient, sausage, can be replaced with meat or poultry pulp. If the broth is fish, then boiled fish, cleaned of bones, is added to the soup.
  • Other ingredients in cold soups are diluted with mineral water without gases or homemade bread or store-bought kvass (but of high quality).
  • Green onions are a must when cooking, but choose other spicy herbs to suit your taste. You can take cilantro, greens from young garlic, mint, young beet or carrot tops.
  • In addition to the vegetables indicated in the recipe, fresh radishes, boiled (or canned) corn or peas are used in okroshka.
  • For a more refined taste, sprinkle a serving of okroshka in a plate with a tablespoon of crushed nuts or toasted sesame seeds.

Okroshka with mayonnaise and sausage is a classic cold dish that is most often prepared in the hot season. Although if you really love okroshka, for example, like me, then you can arrange a summer for yourself at any time.

I like the okroshka to have a lot of fresh herbs, but you can add it to taste - the whole portion into the pan at once or a little separately into each plate. The sausage for okroshka should be chosen not only fresh, but also the most delicious. You should definitely try radishes before slicing, because this root vegetable can present a surprise - it may turn out to be too tough, fibrous or bitter. Cucumber can also be bitter, so be sure to taste it before slicing. There are no special requirements for the remaining ingredients.

To prepare okroshka with mayonnaise and sausage according to the classic recipe, immediately prepare everything necessary products- there are not too many of them.

Boiled sausage can be basically anything - milk sausage, doctor's sausage, with or without lard or lard. Cut fresh sausage into small cubes.

Boil the potatoes in their jackets, cool in cold water and remove the skins. Cut the vegetables into small cubes.

Hard-boil chicken eggs, cool in ice water and remove the shell. Also cut into cubes. All cuts in okroshka should be the same.

Wash fresh cucumbers, trim the ends and check for bitterness. Then cut into cubes.

Wash the radishes, cut off the tails and cut the root vegetable into halves or quarters - depending on the size of the radish.

Choose fresh herbs at your discretion - I love parsley, so I’ll add that and green onions. The greens must first be rinsed and then dried. Chopped onions can be ground with salt.

Place all the chopped ingredients into a large saucepan for easy mixing. Add salt and spices there - for example, ground black pepper, mix everything.

You can add mustard for a spicy note. To serve okroshka, pour the required amount into a bowl and add mayonnaise. It can be store-bought or home-made.

Add water or whey and stir. If you like okroshka with sourness, you can add lemon juice or citric acid.

Stir thoroughly - the classic okroshka with mayonnaise and sausage is ready! You can serve it on the table with a piece of bread. Bon appetit!

I am an ardent fan of okroshka, and even in the cold season, when everyone warms up with borscht and kharcho, I chop up ingredients to prepare my favorite dish. I'm freezing, but I'm eating. We tried many options for both ingredients and dressings. One of the simplest and most win-win is okroshka with sausage, seasoned with a mixture of water and mayonnaise. If desired, you can add lemon juice, mustard, citric acid, spices and herbs.

Prepare necessary products for okroshka with mayonnaise and water - they are all simple and affordable. You may not even need to plan ahead to prepare your favorite dish, since potatoes, cucumbers and eggs are, in principle, almost always in the refrigerator. And if suddenly another piece of sausage is discovered, then there should be no doubt.

For okroshka, take your favorite boiled sausage or small sausages. The sausage can be with lard or bacon - it's up to you. Remove the casing and cut the sausage into small cubes. In general, all ingredients for okroshka should be cut equally.

Now it’s the turn of fresh cucumbers - wash them, trim the ends, check for bitterness. If necessary, you can cut off the peel. Cut the cucumbers into cubes.

Boil chicken eggs hard in salted water. After cooling in cold water, remove the shell and cut the eggs into cubes.

Boil the potatoes in their jackets, cool in cold water, peel and cut into small cubes. Place in a bowl containing previously chopped products.

Wash the fresh herbs and chop finely. Place it in a bowl, also add salt and spices. I usually use black pepper, ground allspice or ground coriander.

Mix everything - it’s better to season the okroshka just before serving. And if you are preparing okroshka right away for a large family, then you can season it right away, and then pour it into plates.

Place a few spoons of okroshka in a bowl. Add a little mayonnaise of any fat content.

Pour water into the bowl - still mineral water or regular boiled water. Stir. Okroshka with mayonnaise and water is ready.

If you want the okroshka to be completely chilled, you can throw an ice cube into the bowl.
