Unfortunately, some of my apples ended up with wormy centers and I had to cut them in half to remove all the excess. Option 1: Baked apples with cottage cheese and raisins - classic recipe

Even the simplest dish can turn out to be not only tasty, but also healthy. Baked apples stuffed with cottage cheese are a dessert to the taste of both adults and children. This cooking method, such as baking, allows you to preserve almost all the beneficial substances contained in apples and cottage cheese. In addition, the dish is rich in calcium and fiber, which is important, especially for children.

To bake apples in the oven you don’t need to be a master of culinary art. Ten minutes to prepare the apples, a quarter of an hour to prepare the filling and another five minutes to fill, the apples are baked for half an hour. In total it will take no more than an hour.

Ingredients:

  • large, selected apples - four pieces;
  • 9% cottage cheese - 100 gr.;
  • two spoons of sugar;
  • 50 gr. honey;
  • a pinch of ground cinnamon;
  • a small handful of raisins.

Step-by-step recipe for baked apples with cottage cheese and raisins

Sort out the raisins and leave in boiling water for five to seven minutes. After decanting all the water, dry the raisins, blotting them with a towel.

Wash the apples thoroughly and dry. Having removed the tail, cut off about a third from the side of the stalk. We remove the core, choosing it so as not to damage the bottom of the apple - a thin bottom should remain.

Grind the cottage cheese on a sieve and mix in a bowl with sugar, cinnamon and honey. Add finely chopped raisins and mix the filling well.

Fill the cavities in the apples with the prepared curd mass, cover with the cut off tops and place the stuffed fruit on a baking sheet.

Bake the apples for half an hour.

Option 2: Quick recipe for baked apples with cottage cheese

To reduce the time, it is enough to fill the curd filling not with a whole apple, but with its halves. The filling can also be simplified by eliminating the raisins that require soaking. Cottage cheese, if there are no grains in it, you can not grind it at all, but only knead it.

Ingredients:

  • two apples with dense pulp;
  • 100 grams of medium-calorie cottage cheese;
  • two spoons of honey;
  • a slice of butter - 12 grams;
  • spoon of light sesame seeds.

How to quickly cook baked apples with cottage cheese

Wipe the washed apples dry with a towel. Having cut lengthwise, remove the core from the pulp so that the partitions go with it. On the rounded sides, cut thinly into small slices - this will give the halves stability and they will not tilt.

Mash the cottage cheese with a masher or the tines of a fork. If it was not possible to knead all the lumps, additionally grind it through a sieve. Dry cottage cheese can be supplemented with sour cream, and add a little vanilla or cinnamon for flavor.

Fill the voids in the apples with cottage cheese, place the halves on a roasting pan grated with a slice of butter. Place half a spoonful of honey on top of the filling and sprinkle with sesame seeds.

Place the apples in the preheated oven and bake for a quarter of an hour.

Option 3: Tender baked apples with cottage cheese and nuts

If you add nuts to the curd filling, not only the nutritional properties and calorie content of the dish will increase, but also its usefulness. Walnuts can be replaced with any to taste without damage. Cashews, small pine nuts, and almonds work well. Cognac, which is poured onto a baking sheet along with water, gives apples a special taste and aroma.

Ingredients:

  • six large apples;
  • two spoons of raspberry jam;
  • 200 gr. fatty dry cottage cheese;
  • four tablespoons of liquid honey;
  • 75 gr. Sahara;
  • spoon of chopped nuts;
  • 30 ml cognac;
  • a spoonful of ground cinnamon powder.

How to cook

Wash the apples and wipe dry with a towel. Having cut off a third of the fruit from the stalk side, using the edge of a knife, carefully cut out the core along with the seed pods. Be careful not to damage the bottom, otherwise the filling will leak out.

Turn on the oven to preheat and raise the temperature to 180 degrees. Pour water into a small, appropriately sized pot so that it covers its bottom by half a centimeter. Add cognac to the water.

Pour honey over the walls and bottom of the cavities made in the apples and place them on a baking sheet. You can also use thick honey, but you will need to melt it first.

Mix cottage cheese with sugar and cinnamon and grind on a sieve. Add and thoroughly mix in the nuts and raspberry jam.

Fill the apples laid out on a baking sheet with the filling and place it in the oven for about twenty minutes. The baking time depends on the size of the fruit; readiness can be determined by piercing it - a knife or fork should enter the pulp freely.

Option 4: Baked apples with cottage cheese in the microwave

This version of dessert can be classified as a group of dishes “on a quick fix" In a microwave oven, apples filled with cottage cheese are cooked for eight minutes. The peculiarity of the recipe is that semolina is added to the cottage cheese, which makes the filling denser.

Ingredients:

  • two tablespoons of low-fat cottage cheese;
  • dense, unripe apples - 2 pcs.;
  • 25 gr. Sahara;
  • one fresh egg;
  • a tablespoon of dry semolina;
  • raisins - 2 tbsp. l.;
  • 20 grams of “Farmer” butter.

Step by step recipe

Place the raisins scalded with boiling water in a bag and leave in it for five minutes. Afterwards, dry and cut into small slices.

Mix the lightly beaten egg with semolina and let stand for ten minutes. Melt the butter and leave to cool well.

Knead or beat the cottage cheese with a blender and combine it with the swollen semolina. Add butter, raisins and mix. For flavor, you can add a little vanilla or cinnamon.

Fill the apples with the curd mixture and place them on a plate. Place in the microwave and cook at full power with the grill on. Baking time for apples in the microwave is up to 8 minutes.

Option 5: Baked apples with cottage cheese and dried apricots in a slow cooker

Dried apricots are no less healthy than nuts or raisins and have a special aroma that goes perfectly with vanilla. If you prefer prunes, take them. An unusual taste can be obtained by using both types of dried fruits simultaneously.

Ingredients:

  • dried apricots - four berries;
  • two apples;
  • spoon of sugar;
  • 150 gr. low-calorie cottage cheese;
  • a spoonful of vanilla sugar;
  • one yolk.

How to cook

We wash the dried apricots and then soak them in boiling water for three minutes. After drying, cut into strips or small slices.

Cut off the tops of washed and dried apples - remove a third, from the side of the stalk. Using a teaspoon or a sharp knife, remove the entire middle - there should be no seeds or partitions left.

Grind the cottage cheese with sugar and vanilla. Add the yolk to it and mix thoroughly. The filling should come out homogeneous, without grains, but if there are any, additionally rub the entire mass through a sieve.

Fill the cavities in the apples with the curd mixture so that a small mound forms on top. Place slices of dried apricots on the cottage cheese and press lightly so that they do not fall off.

Place the apples in the multicooker bowl and close the lid. Having selected the “Baking” program, set the timer to 20 minutes and start the set mode. After completing the cycle, leave the dessert in the multicooker for another 10 minutes.

Option 6: Baked apples with cottage cheese in dough

Apples baked in dough turn out more juicy, because all the juices are preserved inside a dense shell. Be sure to remove the peel; even if baked for a long time, it will not soften enough and pieces can spoil the impression of the dish.

Ingredients:

  • yeast-free puff pastry- 250 gr.;
  • two apples;
  • cottage cheese, fat content from 5% - one hundred grams;
  • two spoons of raisins;
  • 30 gr. sour cream 20%;
  • a spoonful of ground ginger and the same amount of grated cinnamon;
  • 25 gr. sugar;
  • yolk of a large fresh egg.

Step by step recipe

Preparing the apples does not take much time, so the dough must be thawed in advance. At least an hour before cooking, remove it from the packaging and leave it on the table.

We wash the apples with water and cut off the peel in a thin layer. We remove the “spout”, cut off the tops of the fruit and cut out the middle.

Scald the raisins with boiling water and leave in the water for 10 minutes. Place in a colander, drain all the water from the berries and dry with a towel. We dissolve the raisins in strips, or in small slices.

Combine the cottage cheese, grated on a sieve, with raisins, sour cream and ginger, mix.

Roll out the thawed dough into a thin layer. Having cut off a small piece, cut the dough into two layers, and cut each half into five more thin strips. From the previously separated piece, cut out leaves (4 pieces) and use a toothpick to apply a corresponding pattern to them, imitating veins.

We fill the cavities in the fruit with curd filling, return the cut tops and wrap the apples with strips of dough. We overlap it a little so that there are no gaps. We attach a sheet of dough to each prepared piece on top.

Brush the dough well with egg, sprinkle with sugar mixed with cinnamon and place the pieces in a mold with low sides. Cover with a sheet of foil and place in a preheated oven.

First, bake for a quarter of an hour at 180 degrees, then remove the foil and cook for 10 minutes until nicely golden.

1. Wash the apples thoroughly and dry them a little.

2. Cut off the cap of each apple so that it can then be closed back. Scoop out the core with a spoon.

3. Sprinkle a little granulated sugar inside the apple to make it tastier.

4. Fill the apple with baby cottage cheese, flush with the cut edge.

5. Cover the top with a cut-off lid and place the stuffed apples in a baking dish. There is no need to add liquid or cover the top.

6. Bake in the oven at 150 degrees for about 10-15 minutes, depending on the size of the apples.

7. Cool the finished apples with cottage cheese a little. Before serving, pour the apples with the juice obtained during baking.

8. Inside, the baked apple pulp will mix with the curd, you will get a mass very similar to applesauce with cottage cheese - quite suitable for small children who do not yet know how to properly chew food.

Secrets of making baked apples with cottage cheese:

- choose small and strong apples for baking, since large fruits are greatly deformed during baking and do not look very appetizing,

- so that the apple can stand steadily and not sway, tear off or cut off its tail (peduncle) at the root,

— to fill the apples, you can use homemade cottage cheese, which is very simple and quick to prepare,

— instead of sugar for older children, if the child does not have allergies,

- you can bake apples in the microwave, then cooking apples with cottage cheese will take much less time - only about 4-5 minutes.

- Sweet sour cream or milk sauce is also suitable as a gravy.
